This investigation, which enlarges the study previously done, deals with stability and activity of a model enzyme, acid phosphatase from potato (EC 3.2.3.2), in supramolecular systems prepared with butyl acetate and a cationic twin chain surfactant, didodecyldimethylammonium chloride (DDDACl), synthetized in the laboratory. Attention was mainly focused on the dependence of enzyme storage stability on the composition of the aqueous pool in the reverse micelles, temperature, and W0 (water surfactant molar ratio).
