The performance assessment of suction systems is a fundamental aspect in industrial field, and the quantitative estimation of their uptake is a still open challenge. This research proposes a measurement methodology for the quantitative evaluation of the steam uptake of a kitchen hood suction system through the definition of an uptake index, obtained by processing optical measurement using the Farnebäck dense optical-flow algorithm. The results and the uncertainty analysis show high reliability and consistency of the proposed approach.
