Meat quality of Maremmana young bulls and steers was evaluated during a three fattening seasons. Cooking loss were lower in steers which showed also the high shear force. Meat from steers was darker than meat from young bulls with low levels of L and high levels of Chroma. Chemical composition showed an higher content of intramuscular fat in steer’s meat, which showed also lower levels of SFA and higher level of UFA, due to the higher level of PUFA, which determine also lower levels of atherogenic and thrombogenic indexes respect to those found in young bulls meat. CLA contents in fat were similar to those found in meat form animals fed with forages and concentrates with low levels of pasture, although steers fed pasture before fattening showed higher CLA contents in meat than those found in young bulls.
