The objective of the research was investigating the effect of the genotype and environmental conditions (season and place of sowing) on the amount of polyphenols, vicine, convicine and phytates of five varieties of faba bean (Vicia faba var. minor) that resulted the best protein yields under Umbrian pedoclimatic conditions. No effects were observed between seasons and place of sowing on phytates concentration. On the contrary, the higher values of polyphenols, vicine and convicine were recording in spring. The glycosides levels were also influenced by place of growing (environmental conditions).
