This is the third instalment of a book-length account of food and nutrition, with special attention to the behaviour of regulatory agencies. There are few articles which, like this one, place this issue in the proper interdisciplinary framework, stressing the inconsistencies and evasion of responsibilities by the health authorities in European Union and United States. Of particular relevance to present-day public health concerns is the in-depth analysis of regulations on tap water and bottled water, with a proposal for the concentration of nitrites and nitrates based on simple inequalities contradicting the law in force.
