The aim of this study was to characterize milk fat globule membrane proteins from normal and mastitic ovine milk in order to better understand the metabolism of ovine secreting epithelial cell and to define new protein markers of mammary gland physiopathological state. The results indicate that the normal protein pattern of milk fat globule membranes significantly changes during mastitis. The variations observed are related to cell structural and specific milk proteins as well as proteins involved in lipid metabolism and transport, inflammation and immune response of the breast. This observation could be a source of new markers useful to monitoring mammary gland healthy status, flock well-being and milk quality control.
