data were collected in order to evaluate the hygienic characteristics of different species of animal carcasses and premises/equipment, during a two-year implementation period of an HACCP system in a medium-sized slaughterhouse for large animals. Preliminary trials were also performed to evaluate the most suitable sampling sites of the carcass and correlation between carcass cleanliness and microbial surface contamination. The resule of the monitoring program is herein reported in the light of the Decision 2001/471/EC.
