The aim of this study is to evaluate the effect of organic farming on the fibre type distribution and fibre diameter of the Pectoralis major muscle of Kabir chicken. All the fibres were classified as FG, except for some "giant fibres". the mean fibre diameter was 56.1 mm with no significant differences between males and females. The post mortem gycogen breakdown and pH fall showed that only a limited stress took place before slaughter.
