Chemical and compositional aspects are very important topics for assessing the quality of foods. Nowadays, sophisticated analytical techniques allow to obtain very detailed information on the qualitative and quantitative profiles of food constituents. Chemical analysis is required to highlight the nutritional, extra-nutritional and healthy characteristics of foods, included those of animal origin which can be qualitatively affected by feeding strategies. Finally, chemical analysis can also detect the presence of contaminants and reveal possible reactions of alteration and fraudulent operations.
