Microbial analysis were performed on ovine carcass surfaces depelt with and without air inflation. The everage microbial load, Enterobacteriaceae and Staphylococcus spp. count detected by swab and excision method on carcass surfaces immidiately after depelting of both inflated and not inflated lambs were similar. The overall hygienic risk related to the air inflating method is very low.
