Swab samples were collected form 48 beef carcasses originating from the same abattoir over a period of eight months and were subjected to bacteriological examination prio to chilling. Brisket showed he highest contamination rate. The carcass produced during winter showed a consistently lower contamination than those produced in spring and summer. The majority of all examined carcasses showed an agr plate count lower than Log 3 cfu/cm2 and no one was over Log 4 cfu/cm2.
