The aim of this study is to evaluate the muscle fibre distribution and the possible presence of giant fibres in two meat chicken hybrids characterized by different growth speeds. A total of 20 chickens were considered, 10 of which were Kabir, characterized by an intermediate growth speed and reared according to the organic method, and 10 were conventionally reared fast growing Ross hybrids. There are more fibres exhibiting an, at least partial, oxidative metabolism (βR and αR) in the Ileotibialis lateralis and Semimebranosus muscles of the Kabir chickens as compared to the Ross. The percentage of giant fibres in the Pectoralis major muscle is higher (p < 0.001) in the Ross, while there are no significant differences in the Ileotibialis lateralis and Semimembranosus muscles. Furthermore, the giant fibres in both hybrids considered, were larger than the other fibres. Normal fibre diameter was always bigger (p < 0.05) in the Ross hybrid than in the Kabir hybrid.
