The Commission Decision 2001/471/EC, point out that the non-desctructive carcass sampling methods only remove a limited amount of the flora present on carcass surfaces and suggest covering at last 100 cm2 per sampling site. Nevertheless some authors have found similar results on sampling areas smaller of those suggested and when using the excision method. A total of 100 carcasses, 50 swine and 50 bovine were sampled, for TMC and Enterobacteriaceae, with excision method and by wet and dry swab technique on sites of 100 and 25 cm2. TMC obtained from non-destructive methods were always lower than those found using excision methods. Sampling 25 cm2 allow us to obtain, both in bovine and swine, a higher mean TMC value than sampling a 100 cm2 area.
