Influenza del sesso sulle caratteristiche delle fibre muscolari e sulla qualità della carne di polli di razza kabir allevati con metodo biologico.

A total of 20 female and male organically reared Kabir chickens was sampled to evaluate the influence of sex on meat quality traits and on fibre characteristics of three muscles: Pectoralis major, Ileotibialis lateralis, Semimembranosus. Quality parameters (colour, tenderness, cooking loss, pH and chemical composition) were investigated on the breast muscle. Differences in colour were found with the muscle of females being more yellow than that of males. As far as muscle fibre composition and diameter are concerned, the main differences were found in the muscle Ileotibialis lateralis with females having more W fibres and a greater diameter in both muscle fibre types.
